Did you know eggplant is a fruit, it's a berry and not a vegetable! Known by many different names, including aubergine, brinjal, eggfruit and melezana, which is Italian for ‘crazy apple.’

  • Choose eggplant with firm, glossy skin and enjoy it while it’s still fresh. The older the eggplant, the more bitter it may taste.
  • Eggplants are a rich source of dietary fibre, copper and vitamin B1.
  • There are loads of varieties – check out what’s available in your area.
  • Eggplant skin is good for you, so don’t peel it.

Eggplants hate the fridge, where their skin gets dark and rubbery, so try and cook it the day you buy it. Otherwise, store it at room temperature for 2-3 days out of direct sunlight, or in the warmest part of your fridge (near the front.)
