Organic carrots can be grown all year round in NZ. Harvesting of early new season organic carrots begin November with mid and late season varieties following throughout the summer and autumn. Some late season organic carrots are over wintered in the ground to ensure a continuous supply throughout winter and into the spring.
Carrots are a particularly good source of beta carotene, fibre, vitamin K1, potassium, and antioxidants. Orange carrots get their bright colour from beta carotene, an antioxidant that your body converts into vitamin A.
